Pai Mu Tan is een van de Chinese witte thee, die in de provincie Fujian volgens traditionele methoden wordt geproduceerd. Naast verhitten en rollen omvat het productieproces ook het ontvliezen en drogen.

Alleen die delen van de theestruik met grote witte blaadjes en 'zilveren' knoppen worden geplukt. De thee heeft een aangename, milde smaak en een verfrissend aroma. De kleur is licht en helder.

How to prepare
  • Use one heaped teaspoon of leaves, about 2-3 g, per cup, about 2 dl.
  • Heat the water to 75-80 °C (167-176 °F).
  • Steep for 2-3 minutes, then lift out the leaves.
  • Keep the water well below boiling so the delicate buds stay sweet.
