Deze thee, die oorspronkelijk alleen op grote hoogte in Fujian werd verbouwd, dankt zijn naam aan het feit dat hij werd geplukt door apen die er speciaal voor waren getraind. Tegenwoordig wordt hij met de hand geplukt gedurende slechts een paar dagen per jaar. Het wat ruwe, licht donzige blad levert een lichtgroen, zacht kopje op met een subtiele toets van honing.

How to prepare
  • Use one heaped teaspoon of leaves, about 2-3 g, per cup, about 2 dl.
  • Heat the water to 75-80 °C (167-176 °F).
  • Steep for 2-3 minutes, then lift out the leaves.
  • Keep the water well below boiling so the delicate buds stay sweet.
