What makes Ceylon tea different from Assam or Darjeeling?
Altitude and climate. Sri Lanka's high-grown gardens give a brisker, brighter cup with a citrus edge, where Assam is malty and full-bodied and Darjeeling is lighter and more floral. If Assam feels too heavy and Darjeeling too delicate, Ceylon usually lands exactly where you want it.
What do FBOP, OP and Pekoe mean on the pack?
They are leaf grades, not quality scores. OP (Orange Pekoe) means long whole leaves and FBOP (Flowery Broken Orange Pekoe) means broken leaves with tips. Smaller particles brew faster and stronger, whole leaves brew more slowly and more subtly. Neither is better, they simply suit different cups.
How should I brew Ceylon tea?
Use water at around 95 degrees and steep for 3 to 5 minutes. Ceylon has enough backbone to take milk, but it also drinks beautifully clear with a slice of lemon. If your cup turns bitter, shorten the steep rather than using less leaf.
Does Ceylon tea contain caffeine?
Yes. As a black tea it contains caffeine, roughly a third to a half of what the same volume of coffee would give you. High-grown Ceylon tends to feel brisk and clean rather than heavy, which is why many people drink it in the morning.
Is Ceylon tea good for iced tea?
It is one of the best. Its bright, citrusy character stays clear rather than turning cloudy or flat when chilled. Brew it a little stronger than usual, let it cool, then pour over ice with lemon.
